Taste of Australia with Sarina Kamini

Tourism Australia is raising a toast to the end of 2020 – a year that saw the resilience and recovery prevail even amid devastating bushfires and a global pandemic.

While we patiently await Australia’s borders to reopen once again for travel, enjoy a taste of the holidays with this Aussie mulled wine recipe by Spice Mistress Sarina Kamini from Margaret River, one of Western Australia’s premier wine regions.

Mulled wine Australian style
● 1 bottle of Shiraz
● 1 star anise
● 1 cinnamon stick
● 1 or 2 sprigs of fresh rosemary
● 6 to 8 fresh native pepper berry (substitute fresh Szechuan peppercorns /
substitute equal parts fresh white or black peppercorns)
● 3 for 4 slices of blood orange (substitute 2 slices orange)
● 3 teaspoons caster sugar

Directions: Put all spice in a pot with the bottle of wine and the blood orange slices and
simmer on low heat for about least 15 minutes. Keeping the lid on will help.
